Zucchini Fritter Stack with Yogurt Sauce

These crispy zucchini fritters stacked with a tangy yogurt sauce create a light and flavorful dish, perfect as a snack or a wholesome appetizer.

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil, for frying
  • 1/2 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper, to taste

Instructions

  1. Grate the zucchinis and place them in a colander. Sprinkle with salt and let sit for 10 minutes to draw out moisture.
  2. Using a clean kitchen towel or cheesecloth, squeeze the grated zucchini to remove excess water.
  3. In a bowl, combine the zucchini, flour, Parmesan, egg, garlic, and black pepper. Mix well to form a batter.
  4. Heat olive oil in a skillet over medium heat. Scoop spoonfuls of batter and flatten into small patties.
  5. Fry the fritters for 3-4 minutes on each side until golden and crispy. Drain on paper towels.
  6. In a small bowl, mix Greek yogurt, lemon juice, dill, salt, and pepper to make the yogurt sauce.
  7. Stack the zucchini fritters on plates and drizzle generously with the yogurt sauce before serving.

Notes

For extra flavor, add chopped scallions or a pinch of smoked paprika to the fritter batter. These stacks also pair wonderfully with a side salad.
