White Bean Kale Soup

A hearty and wholesome white bean kale soup packed with nutritious greens and creamy beans, perfect for a cozy and healthy meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 bunch kale, stems removed and leaves chopped
  • 1 teaspoon dried thyme
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • Juice of half a lemon

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another 1 minute until fragrant.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Add the white beans, dried thyme, and crushed red pepper flakes if using. Simmer for 10 minutes to allow flavors to meld.
  5. Add the chopped kale and cook until tender, about 5-7 minutes.
  6. Season the soup with salt, black pepper, and lemon juice to taste.
  7. Serve warm, garnished with a drizzle of olive oil or grated Parmesan if desired.

Notes

For a creamier texture, blend part of the soup before adding kale. Serve with crusty bread for a complete meal.
