  • 2 cups diced sweet potatoes
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, diced
  • 1 zucchini, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a large sheet pan with parchment paper.
  2. In a large bowl, combine diced sweet potatoes, bell peppers, red onion, zucchini, and minced garlic.
  3. Drizzle the olive oil over the vegetables, then sprinkle smoked paprika, ground cumin, salt, and pepper. Toss to coat evenly.
  4. Spread the vegetables in an even layer on the prepared sheet pan.
  5. Roast in the oven for 25-30 minutes, tossing halfway through, until vegetables are tender and slightly caramelized.
  6. Remove from oven and sprinkle with fresh parsley if desired.
  7. Serve warm as a main dish or a side.
