Tortellini Soup

A comforting and hearty Italian-inspired soup featuring cheese-filled tortellini in a savory broth with fresh vegetables and herbs. Perfect for a cozy meal any day of the week.

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 2 cups cheese tortellini (fresh or frozen)
  • 2 cups fresh spinach
  • 1 medium carrot, peeled and diced
  • 1 stalk celery, diced
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic, sauté until softened and fragrant, about 3-4 minutes.
  2. Add diced carrot and celery, cook for another 3 minutes until vegetables begin to soften.
  3. Pour in the broth and diced tomatoes with their juice. Stir in basil and oregano. Bring to a simmer.
  4. Add the tortellini and cook according to package instructions, typically 3-5 minutes until tender.
  5. Stir in fresh spinach and cook just until wilted, about 1 minute.
  6. Season the soup with salt and pepper to taste.
  7. Ladle soup into bowls and garnish with grated Parmesan cheese before serving.

Notes

For added richness, stir in a splash of heavy cream or garnish with fresh basil leaves. Serve with crusty bread for a complete meal.
