  • 1 lb potato gnocchi
  • 1/2 cup sun-dried tomatoes (packed in oil), chopped
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add the chopped sun-dried tomatoes and cook for 2 minutes, stirring frequently.
  4. Pour in the heavy cream and stir to combine. Let the sauce simmer gently for 3-4 minutes until slightly thickened.
  5. Stir in the grated Parmesan cheese and red pepper flakes, if using. Season with salt and pepper to taste.
  6. Add the cooked gnocchi to the skillet and toss gently to coat them evenly with the sauce.
  7. Cook for an additional 1-2 minutes to warm through, then remove from heat.
