Stuffed Pepper Soup

Hearty homemade Stuffed Pepper Soup in rustic bowl

A hearty and comforting soup that captures the flavors of classic stuffed peppers in a warm, delicious bowl. Perfect for a satisfying family meal any time of year.

  • 1 lb ground beef
  • 1 medium onion, diced
  • 3 bell peppers (red, green, yellow), diced
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 4 cups beef broth
  • 1 cup cooked white rice
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes.
  2. Add ground beef to the pot and cook until browned, breaking it up with a spoon.
  3. Stir in minced garlic and diced bell peppers. Cook for an additional 5 minutes until peppers begin to soften.
  4. Add diced tomatoes, tomato sauce, beef broth, oregano, and basil. Stir well to combine.
  5. Bring soup to a boil, then reduce heat and simmer uncovered for 20 minutes.
  6. Stir in cooked rice and season with salt and pepper. Simmer for another 5 minutes to heat through.
  7. Serve hot, optionally topped with shredded cheese or fresh parsley.

Notes

For a vegetarian version, substitute ground beef with cooked lentils or plant-based crumbles and use vegetable broth instead of beef broth.
