Delight in these vibrant Spicy Shrimp Sushi Stacks, combining tender shrimp with zesty spice and fresh sushi essentials for a quick, flavorful appetizer or light meal.

  • 1 cup sushi rice, cooked and cooled
  • 8 oz cooked shrimp, peeled and chopped
  • 2 tbsp mayonnaise
  • 1 tbsp Sriracha sauce
  • 1 tsp soy sauce
  • 1 avocado, diced
  • 1 small cucumber, thinly sliced
  • 1 sheet nori, cut into small strips
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp sesame seeds
  • 2 green onions, finely chopped
  • Pickled ginger and wasabi, for serving (optional)

Instructions

  1. In a bowl, mix the cooked shrimp with mayonnaise, Sriracha, and soy sauce until well combined. Set aside.
  2. Season the sushi rice with rice vinegar and sesame oil; fold gently to mix.
  3. In serving glasses or molds, layer a spoonful of sushi rice as the base.
  4. Add a layer of diced avocado on top of the rice.
  5. Place a layer of the spicy shrimp mixture over the avocado.
  6. Add a layer of thin cucumber slices.
  7. Repeat layers if desired, finishing with a sprinkle of sesame seeds and chopped green onions.
  8. Garnish with nori strips and serve with pickled ginger and wasabi on the side.

Notes

For extra crunch, top the sushi stacks with tempura flakes or substitute cooked shrimp with spicy tuna for a different variation.
