Slow Cooker Italian Beef Sandwiches

Tender, flavorful Italian beef slow-cooked to perfection and served juicy on crusty rolls, these sandwiches are a comforting and easy meal perfect for any occasion.

  • 3 to 4 pounds beef chuck roast
  • 1 packet Italian dressing mix
  • 1 packet ranch dressing mix
  • 2 cups beef broth
  • 1/2 cup pepperoncini peppers with juice
  • 4 hoagie rolls or Italian sandwich buns
  • Provolone cheese slices (optional)
  • Salt and pepper, to taste

Instructions

  1. Season the beef roast with salt and pepper and place it in the slow cooker.
  2. Sprinkle Italian dressing mix and ranch dressing mix evenly over the roast.
  3. Pour beef broth around the roast, then add pepperoncini peppers and their juice on top.
  4. Cover and cook on low for 8 to 10 hours, or until beef is tender and shreds easily.
  5. Remove beef from the slow cooker and shred with two forks.
  6. Return shredded beef to the slow cooker and stir to soak in the juices.
  7. To serve, pile the beef onto hoagie rolls, topping with provolone cheese if desired. Serve warm.

Notes

For extra flavor, toast the sandwich rolls before assembling and serve with giardiniera or extra pepperoncini on the side.
