Roasted Garlic Mashed Potatoes

Creamy and flavorful roasted garlic mashed potatoes that make a perfect side dish for any meal, combining the nuttiness of roasted garlic with smooth, buttery potatoes.

  • 2 pounds Yukon Gold potatoes, peeled and cut into chunks
  • 1 whole head garlic
  • 3 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 1/2 cup whole milk, warmed
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh chives (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Slice the top off the garlic head to expose cloves, drizzle with olive oil, wrap in foil, and roast for 40 minutes until golden and soft.
  2. Place peeled and cut potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over high heat.
  3. Reduce heat and simmer potatoes until tender, about 15-20 minutes. Drain well.
  4. Squeeze the roasted garlic cloves out of their skins into a large bowl.
  5. Add the drained potatoes, butter, and warmed milk to the bowl with roasted garlic.
  6. Mash until smooth and creamy. Season with salt and pepper to taste.
  7. Garnish with chopped fresh chives if desired and serve warm.

Notes

For extra richness, substitute half of the milk with heavy cream or add a dollop of sour cream just before serving.
