roasted cauliflower tacos

These roasted cauliflower tacos offer a flavorful, healthy twist on a classic Mexican favorite, featuring tender spiced cauliflower with fresh toppings wrapped in warm tortillas.

  • 1 medium head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded red cabbage
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, sliced
  • 1 lime, cut into wedges
  • Optional: crumbled queso fresco or feta cheese
  • Optional: salsa or hot sauce, for serving

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss cauliflower florets with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  3. Spread the cauliflower on a baking sheet in a single layer and roast for 25-30 minutes, stirring halfway, until tender and golden.
  4. Warm the tortillas in a dry skillet or oven for a few minutes until pliable.
  5. Assemble the tacos by placing roasted cauliflower on each tortilla, then topping with shredded cabbage, avocado slices, and cilantro.
  6. Squeeze fresh lime juice over the tacos and add optional queso fresco and salsa if desired.
  7. Serve immediately and enjoy!

Notes

For extra flavor, try adding pickled red onions or a drizzle of crema or Greek yogurt to the tacos.
