Roasted Beet Goat Cheese

A vibrant and healthy dish featuring tender roasted beets paired with creamy goat cheese, perfect as a salad or appetizer.

Ingredients

  • 4 medium beets, washed and trimmed
  • 3 oz goat cheese, softened
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • Salt and freshly ground black pepper, to taste
  • Fresh thyme or microgreens, for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wrap beets individually in aluminum foil and place on a baking sheet.
  3. Roast beets in the oven for 45–60 minutes, or until tender when pierced with a fork.
  4. Remove beets from oven, unwrap, and allow to cool slightly.
  5. Peel the skins off the beets using your hands or a paper towel.
  6. Slice the roasted beets into rounds or wedges.
  7. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
  8. Arrange beet slices on a serving plate, dollop goat cheese on top, and drizzle with the dressing.
  9. Garnish with fresh thyme or microgreens if desired and serve immediately.

Notes

For a more substantial salad, add toasted walnuts or serve over a bed of arugula for extra peppery flavor.
