Pomegranate Glazed Lamb Chops

  • 8 lamb chops (about 1 inch thick)
  • 1 cup pomegranate juice
  • 2 tbsp honey
  • 2 tbsp balsamic vinegar
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • Fresh rosemary sprigs (for garnish)

Instructions

  1. Season the lamb chops with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add lamb chops and sear for 3-4 minutes per side until browned and cooked to desired doneness.
  4. Remove lamb chops from skillet and set aside to rest.
  5. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  6. Pour in pomegranate juice, honey, and balsamic vinegar; bring to a simmer.
  7. Cook the sauce until it reduces by half and thickens to a glaze consistency, about 8-10 minutes.
  8. Return lamb chops to the skillet and spoon the pomegranate glaze over them to coat.
  9. Serve lamb chops garnished with fresh rosemary sprigs.

Notes

For extra flavor, marinate the lamb chops in olive oil, garlic, and rosemary for 2 hours before cooking. Pair with roasted vegetables or couscous for a complete meal.
