Pineapple Chicken is a flavorful and tangy dish combining tender chicken with sweet pineapple chunks, perfect for a quick and vibrant dinner.

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup fresh pineapple chunks
  • 2 tbsp vegetable oil
  • 1/2 cup diced bell peppers (red or green)
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 2 green onions, sliced (for garnish)
  • Cooked rice, for serving

Instructions

  1. Heat vegetable oil in a skillet over medium-high heat.
  2. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes.
  3. Stir in garlic and ginger; cook for 1 minute until fragrant.
  4. Add bell peppers and pineapple chunks; sauté for 3-4 minutes until peppers soften slightly.
  5. In a small bowl, whisk together soy sauce, honey, and crushed red pepper flakes.
  6. Pour sauce mixture into the skillet and stir to coat the chicken and vegetables.
  7. Add cornstarch slurry and cook for another 2 minutes until sauce thickens.
  8. Remove from heat, garnish with sliced green onions, and serve over cooked rice.

Notes

For an extra layer of flavor, try adding a splash of rice vinegar or a sprinkle of toasted sesame seeds before serving.
