Pesto Stuffed Chicken

Deliciously tender chicken breasts stuffed with vibrant homemade pesto, baked to golden perfection for a flavorful and satisfying Italian-inspired meal.

  • 4 boneless, skinless chicken breasts
  • 1/2 cup basil pesto
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 1/4 teaspoon garlic powder
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Using a sharp knife, carefully cut a pocket into the side of each chicken breast without cutting all the way through.
  3. Season the chicken breasts inside and out with salt, pepper, and garlic powder.
  4. Stuff each pocket evenly with 2 tablespoons of basil pesto and a sprinkle of shredded mozzarella cheese.
  5. Secure the edges with toothpicks if necessary to keep the filling inside.
  6. Heat olive oil in an oven-safe skillet over medium-high heat.
  7. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and juices run clear.
  9. Remove toothpicks, garnish with fresh basil leaves if desired, and serve warm.

Notes

For an extra crispy top, sprinkle additional mozzarella cheese on the chicken before baking. Serve with a side of roasted vegetables or a fresh green salad.
