  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup natural peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the peanut butter, honey (or maple syrup), salt, and vanilla extract to the bananas and mix until well combined.
  4. Stir in the rolled oats and mix until all ingredients are evenly incorporated.
  5. If using, fold in the chopped nuts or chocolate chips.
  6. Transfer the mixture to the prepared baking pan and press down evenly.
  7. Bake for 20-25 minutes, or until the edges are golden and the bars are set.
  8. Remove from oven and allow to cool completely before slicing into bars.

Notes

For a crunchier texture, toast the oats lightly before mixing. These bars can be stored in an airtight container for up to 5 days or frozen for longer storage.
