Oven-Crisped Parmesan Potatoes

Delight in crispy, golden potatoes coated with savory Parmesan and herbs, perfect for a flavorful side dish that’s easy to prepare.

  • 4 large russet potatoes, peeled and cut into wedges
  • 3 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the potato wedges with olive oil, garlic powder, Italian seasoning, salt, and pepper until evenly coated.
  3. Sprinkle the grated Parmesan cheese over the potatoes and toss gently to distribute.
  4. Arrange the potatoes in a single layer on the prepared baking sheet, ensuring they are not overcrowded.
  5. Bake for 25–30 minutes, flipping the potatoes halfway through, until they are golden and crispy.
  6. Remove from the oven and garnish with chopped fresh parsley if desired. Serve hot.

Notes

For extra crispiness, soak the potato wedges in cold water for 30 minutes before cooking to remove excess starch.
