Ingredients

Scale
  • 2 tbsp butter
  • 1 medium onion, diced
  • 2 celery stalks, diced
  • 2 medium potatoes, peeled and cubed
  • 3 cups fish stock or clam juice
  • 1 cup heavy cream
  • 1 lb cod fillet, cut into chunks
  • 1/2 lb cooked scallops
  • 1/2 lb cooked shrimp, peeled and deveined
  • 2 strips bacon, chopped
  • Salt and pepper, to taste
  • Fresh thyme sprigs
  • 2 tbsp fresh parsley, chopped

Instructions

  1. In a large pot, melt butter over medium heat. Add onions and celery; cook until softened, about 5 minutes.

  3. Add the cubed potatoes and fish stock. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  4. Add the cod pieces and thyme sprigs; simmer gently until fish is cooked through, about 5-7 minutes.
  5. Stir in the cooked scallops and shrimp to warm through.
  6. Remove thyme sprigs and stir in the heavy cream. Season with salt and pepper to taste.
  7. Simmer for another 2-3 minutes, then remove from heat.
  8. Ladle chowder into bowls and garnish with fresh parsley. Serve hot.

Notes

For extra richness, serve with crusty bread and a splash of hot sauce on the side for those who like a little heat.
