  • 2 teaspoons ground ginger

  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar (plus extra for rolling)
  • 1 large egg
  • 1/4 cup water
  • 1/4 cup molasses

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, ginger, baking soda, cinnamon, cloves, and salt.
  3. In a large bowl, beat the softened butter and 1 cup sugar until light and fluffy.
  4. Add the egg, then stir in water and molasses.
  5. Gradually add the dry ingredients to the wet mixture, mixing until combined.
  6. Roll dough into 1-inch balls, then roll each ball in granulated sugar to coat.
  7. Place the balls 2 inches apart on prepared baking sheets.
  8. Bake for 8-10 minutes until cookies are set and crinkled on top.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra touch, sprinkle some coarse sugar on top before baking for added crunch and sparkle.
