  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon fresh thyme, chopped
  • 1 cup cooked quinoa
  • 1 cup baby spinach
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • Salt and freshly ground black pepper, to taste
  • Optional: 1/4 cup crumbled feta cheese

Instructions

  1. In a bowl, whisk together olive oil, lemon juice and zest, garlic, oregano, thyme, salt, and pepper.
  2. Marinate chicken breasts in the lemon-herb mixture for at least 30 minutes.
  3. Preheat a grill or skillet over medium heat. Cook chicken for 6-7 minutes per side until cooked through.
  4. Let chicken rest for 5 minutes, then slice thinly.
  5. Divide cooked quinoa into two bowls, then top with baby spinach, cherry tomatoes, cucumber, and red onion.
  6. Add sliced chicken on top, drizzle any remaining marinade, and sprinkle with feta cheese if desired.
  7. Serve immediately and enjoy a fresh, balanced meal packed with flavor.

Notes

For extra crunch, add toasted almonds or pumpkin seeds. You can also swap quinoa for brown rice or farro.
