Jalapeno Poppers Nourish Bowl

A vibrant and flavorful nourish bowl featuring spicy jalapeno poppers, fresh vegetables, and wholesome grains, perfect for a nutritious and satisfying meal.

  • 4 jalapenos, halved and seeded
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1 cup cooked quinoa
  • 1 cup baby spinach
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup black beans, rinsed and drained
  • 1/4 cup corn kernels
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix the cream cheese and shredded cheddar cheese in a bowl until well combined.
  3. Spoon the cheese mixture into each jalapeno half.
  4. Place the stuffed jalapenos on a baking sheet lined with parchment paper and bake for 15 minutes until cheese is melted and jalapenos are tender.
  5. Meanwhile, in a large bowl, combine cooked quinoa, baby spinach, cherry tomatoes, black beans, and corn.
  6. Drizzle the olive oil over the quinoa mixture and season with salt and pepper; toss well.
  7. Transfer the quinoa mixture to serving bowls and top with baked jalapeno poppers.
  8. Garnish with fresh cilantro and serve warm.

Notes

For extra protein, add grilled chicken or tofu to the bowl, and serve with a squeeze of fresh lime for added zest.
