  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 3 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 2 tablespoons all-purpose flour
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Toss the chicken pieces in flour seasoned with salt and pepper, then add them to the pot. Brown the chicken on all sides, about 5-6 minutes.
  4. Add sliced carrots and celery, cook for 3 minutes, stirring occasionally.
  5. Pour in the chicken broth, then add thyme, oregano, salt, and pepper. Bring to a simmer.
  6. Cover and simmer for 20 minutes, until vegetables are tender and chicken is cooked through.
  7. Stir in the heavy cream and grated Parmesan cheese until melted and well combined.
  8. Adjust seasoning if needed, and cook uncovered for another 5 minutes to thicken.
  9. Serve hot, garnished with freshly chopped parsley.
