Garlic Butter Beef Bites with Creamy Mashed Potatoes

  • 1 lb beef sirloin, cut into bite-sized pieces
  • 3 tbsp unsalted butter, divided
  • 4 garlic cloves, minced
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 2 lbs potatoes, peeled and cubed
  • 1/2 cup whole milk
  • 1/4 cup sour cream
  • 2 tbsp fresh parsley, chopped (optional)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 15-20 minutes.
  2. While potatoes cook, heat olive oil in a large skillet over medium-high heat. Season beef bites with salt and pepper.
  3. Add half the butter to the skillet, then sear beef bites until browned and cooked to desired doneness, about 4-5 minutes. Remove beef and set aside.
  4. Reduce heat to medium, add remaining butter and garlic to the skillet. Sauté garlic until fragrant, about 1 minute.
  5. Return beef bites to the skillet, tossing to coat in garlic butter. Remove from heat.
  6. Drain potatoes and return to pot. Add milk, sour cream, salt, and pepper. Mash until smooth and creamy.
  7. Serve beef bites over or alongside the creamy mashed potatoes. Garnish with fresh parsley if desired.

Notes

For extra flavor, add a splash of Worcestershire sauce to the beef bites before cooking or mix roasted garlic into the mashed potatoes.
