Flourless Yogurt Cake

A moist and tender flourless yogurt cake that is naturally gluten-free, bursting with zesty lemon flavor and perfect for a light dessert or snack.

  • 1 cup Greek yogurt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • A pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
  2. In a large bowl, whisk together eggs and sugar until pale and fluffy.
  3. Add Greek yogurt, vanilla extract, and lemon zest; mix until well combined.
  4. In a separate bowl, combine almond flour, baking powder, and salt.
  5. Gently fold the dry ingredients into the wet ingredients until smooth and uniform.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
