  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups milk chocolate chips
  • 1 tablespoon coconut oil (optional, for smoother chocolate)

Instructions

  1. In a medium bowl, mix the peanut butter, softened unsalted butter, powdered sugar, and vanilla extract until smooth and well combined.
  2. Line a baking sheet with parchment paper.
  3. Shape the peanut butter mixture into small egg shapes, about 1-2 inches long, and place them on the lined baking sheet.
  4. Freeze the peanut butter eggs for 30 minutes to firm up.
  5. Meanwhile, melt the chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  6. Remove peanut butter eggs from the freezer and dip each egg into the melted chocolate, fully coating them.
  7. Place the chocolate-coated eggs back onto the parchment paper and refrigerate for at least 1 hour to set.
  8. Once set, store the eggs in an airtight container in the refrigerator until ready to serve.
