Crispy Corn Toast Bites are a deliciously crunchy snack featuring golden toasted bread topped with seasoned corn, perfect for a quick appetizer or party treat.

  • 4 slices white bread, crusts removed
  • 1 cup fresh or canned corn kernels
  • 2 tbsp butter
  • 1 garlic clove, minced
  • 1/4 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp mayonnaise
  • 1 tbsp chopped fresh cilantro
  • 1 tsp lemon juice

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the white bread slices into bite-sized squares and arrange them on a baking sheet.
  3. Toast the bread squares in the oven for 8-10 minutes or until crisp and golden.
  4. In a skillet, melt butter over medium heat and sauté minced garlic until fragrant, about 1 minute.
  5. Add corn kernels, smoked paprika, salt, and pepper. Cook for 3-4 minutes until corn is warmed and slightly caramelized.
  6. In a small bowl, mix mayonnaise with lemon juice and chopped cilantro.
  7. Spread a small amount of the mayo mixture on each toasted bread square.
  8. Top each bite with the sautéed corn mixture.
  9. Serve immediately while crisp for best texture.

Notes

For extra flavor, sprinkle some grated Parmesan cheese over the corn before serving or add a dash of hot sauce for a spicy kick.
