This crispy chicken schnitzel Alfredo combines golden, crunchy chicken with a rich and creamy Alfredo sauce, creating a comforting Italian-inspired dish perfect for dinner.

  • 2 large chicken breasts, pounded thin
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 ½ cups breadcrumbs
  • Salt and pepper, to taste
  • ½ cup grated Parmesan cheese
  • 3 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 ½ cups heavy cream
  • 1 cup grated Parmesan cheese (for Alfredo sauce)
  • Fresh parsley, chopped (for garnish)
  • Cooked fettuccine or pasta of choice, to serve

Instructions

  1. Season the pounded chicken breasts with salt and pepper.
  2. Set up a breading station: one plate with flour, one bowl with beaten eggs, and one plate with breadcrumbs mixed with ½ cup Parmesan.
  3. Dredge each chicken breast in flour, then dip in eggs, and finally coat with the breadcrumb-Parmesan mixture.
  4. Heat olive oil in a large skillet over medium heat. Fry the breaded chicken until golden brown and cooked through, about 4-5 minutes per side. Remove and keep warm.
  5. In the same skillet, melt butter and sauté minced garlic until fragrant, about 1 minute.
  6. Pour in heavy cream and bring to a gentle simmer. Stir in 1 cup Parmesan cheese until melted and sauce thickens slightly.
  7. Return chicken schnitzels to the skillet, spoon Alfredo sauce over them and heat through for 2 minutes.
  8. Serve schnitzel Alfredo over cooked fettuccine, garnished with fresh parsley.

Notes

For extra flavor, add a pinch of nutmeg to the Alfredo sauce or serve with a side of steamed vegetables.
