Potato Soup

This creamy and comforting potato soup is perfect for chilly days, combining tender potatoes with savory broth and a hint of herbs for a hearty meal.

  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1/2 teaspoon dried thyme
  • 1 cup shredded cheddar cheese (optional)
  • 2 green onions, sliced (optional garnish)

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  2. Add the diced potatoes, dried thyme, salt, and pepper. Stir to combine.
  3. Pour in the broth and bring the mixture to a boil. Reduce heat and let simmer until potatoes are tender, about 20 minutes.
  4. Use an immersion blender to puree the soup partially, leaving some chunks for texture. Alternatively, transfer half the soup to a blender and blend, then return to pot.
  5. Stir in the heavy cream and heat through for an additional 5 minutes. Adjust seasoning as needed.
  6. Serve hot, topped with shredded cheddar cheese and sliced green onions if desired.

Notes

For a vegetarian version, use vegetable broth and omit cheese or use a plant-based alternative. Serve with crusty bread for a complete meal.
