Creamy Miso Butter Beans combine tender butter beans with a rich, savory miso-infused sauce, creating a comforting and nutritious plant-based dish perfect for any meal.

  • 2 cups cooked butter beans (canned or fresh)
  • 2 tablespoons unsalted butter
  • 1 tablespoon white miso paste
  • 1/2 cup vegetable broth
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add minced garlic and cook for another 1 minute until fragrant.
  3. Stir in the butter until melted and combined.
  4. Add the cooked butter beans to the skillet and gently stir.
  5. In a small bowl, whisk together the miso paste and vegetable broth until smooth.
  6. Pour the miso mixture over the beans and simmer on low heat for 5-7 minutes, stirring occasionally, until the sauce is creamy and slightly thickened.
  7. Add lemon juice, and season with salt and black pepper to taste. Stir well.
  8. Remove from heat and garnish with chopped fresh parsley before serving.

Notes

For extra creaminess, stir in a splash of coconut milk or cream before serving. Serve over rice or crusty bread for a complete meal.
