This cottage cheese flatbread pizza offers a healthy and delicious twist on traditional pizza, combining creamy cottage cheese with fresh veggies on a crispy flatbread base.

  • 2 flatbreads (store-bought or homemade)
  • 1 cup cottage cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup thinly sliced red onion
  • 1/4 cup sliced black olives
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • Fresh basil leaves for garnish
  • Salt and pepper to taste
  • Olive oil for brushing

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the flatbreads on a baking sheet and lightly brush them with olive oil.
  3. Spread a generous layer of cottage cheese evenly over each flatbread.
  4. Sprinkle shredded mozzarella and grated Parmesan cheese on top of the cottage cheese layer.
  5. Distribute cherry tomatoes, red onion slices, and black olives evenly over the cheese.
  6. Sprinkle dried oregano, garlic powder, salt, and pepper over the toppings.
  7. Bake in the preheated oven for 12-15 minutes or until the cheese is melted and the flatbread edges are crisp and golden.
  8. Remove from oven and garnish with fresh basil leaves before serving.

Notes

For an extra flavor boost, drizzle with balsamic glaze just before serving or add some crushed red pepper flakes for heat.
