Moist and flavorful cinnamon swirl banana bread made with ripe bananas and a sweet cinnamon sugar swirl, perfect for breakfast or an afternoon snack.

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • ¼ cup brown sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a bowl, whisk together flour, baking soda, salt, and ½ teaspoon cinnamon. Set aside.
  3. In a large bowl, cream the butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in mashed bananas, sour cream, and vanilla extract until combined.
  6. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  7. In a small bowl, combine brown sugar and 1 tablespoon cinnamon.
  8. Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture over the batter.
  9. Top with the remaining batter, then sprinkle the remaining cinnamon sugar on top.
  10. Use a knife or skewer to gently swirl the cinnamon sugar through the batter.
  11. Bake for 60 to 70 minutes, or until a toothpick inserted in the center comes out clean.
  12. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For extra moisture, try adding a handful of chopped walnuts or pecans to the batter before baking.
