These Buffalo Chickpea Wraps offer a spicy, protein-packed twist on a classic buffalo dish, combining chickpeas with tangy buffalo sauce wrapped in a soft tortilla for a quick and satisfying meal.

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 4 large flour tortillas or wraps
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup shredded carrot
  • 1/4 cup blue cheese crumbles (optional)
  • Ranch or blue cheese dressing, for serving

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss chickpeas with olive oil, garlic powder, smoked paprika, and buffalo sauce until evenly coated.
  3. Spread chickpeas on a baking sheet and roast for 20 minutes, tossing halfway through, until slightly crispy.
  4. Warm tortillas in a dry skillet or microwave for a few seconds to soften.
  5. Divide roasted chickpeas evenly among tortillas.
  6. Top each with shredded lettuce, diced tomatoes, shredded carrot, and blue cheese crumbles if using.
  7. Drizzle with ranch or blue cheese dressing as desired.
  8. Roll up the tortillas tightly to form wraps and serve immediately.

Notes

For extra heat, add a few dashes of hot sauce inside the wrap or include sliced jalapeños for a spicy kick.
