Buffalo Chicken Taquitos

Crispy baked Buffalo Chicken Taquitos combine spicy shredded chicken with creamy cheese wrapped in crunchy tortillas, perfect as a flavorful appetizer or snack.

  • 2 cups cooked shredded chicken
  • 1/2 cup Buffalo wing sauce
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup blue cheese crumbles (optional)
  • 8 small flour tortillas
  • Cooking spray or oil for brushing
  • Ranch or blue cheese dressing, for serving

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix shredded chicken, Buffalo sauce, cream cheese, cheddar cheese, and blue cheese crumbles (if using) until well combined.
  3. Warm tortillas slightly to make them pliable.
  4. Spoon about 2-3 tablespoons of the chicken mixture onto each tortilla, spreading evenly.
  5. Roll up each tortilla tightly and place seam side down on the prepared baking sheet.
  6. Lightly spray or brush the taquitos with cooking oil.
  7. Bake for 15-20 minutes or until crispy and golden brown.
  8. Serve hot with ranch or blue cheese dressing for dipping.

Notes

For extra crispiness, serve immediately after baking or reheat briefly in a skillet. Add diced celery inside for a refreshing crunch.
