Brussels Sprouts Caesar

A fresh and crunchy twist on the classic Caesar salad, featuring shaved Brussels sprouts tossed in a creamy Caesar dressing with Parmesan and crispy croutons.

  • 4 cups Brussels sprouts, thinly shaved
  • 1/2 cup Caesar dressing
  • 1/4 cup grated Parmesan cheese
  • 1 cup croutons
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 small garlic clove, minced
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Trim and thinly shave Brussels sprouts using a mandoline or sharp knife.
  2. In a small bowl, whisk together Caesar dressing, lemon juice, Dijon mustard, minced garlic, salt, and pepper.
  3. In a large bowl, toss the shaved Brussels sprouts with the dressing until evenly coated.
  4. Add Parmesan cheese and croutons, gently mixing to combine.
  5. Drizzle olive oil over the salad and toss lightly one more time.
  6. Serve immediately as a fresh side or light main dish.

Notes

For extra protein, add grilled chicken or crispy bacon bits. This salad is best eaten fresh to maintain the crunch of the Brussels sprouts and croutons.
