Chicken Noodle Soup

A comforting and hearty Chicken Noodle Soup made with tender chicken, fresh vegetables, and egg noodles in a flavorful broth, perfect for any season.

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic; sauté until translucent.
  2. Add sliced carrots and celery; cook for 5 minutes until slightly softened.
  3. Pour in chicken broth and bring to a boil.
  4. Add dried thyme, salt, and pepper. Reduce heat and simmer for 10 minutes.
  5. Stir in shredded cooked chicken and egg noodles. Cook until noodles are tender, about 8 minutes.
  6. Adjust seasoning as needed. Stir in fresh parsley before serving.

Notes

For extra flavor, try adding a squeeze of fresh lemon juice or a pinch of red pepper flakes before serving.
