This Baked Honey Marinade Cod features tender cod fillets glazed with a sweet and savory honey marinade, perfect for a healthy and flavorful dinner option.

  • 4 cod fillets (about 6 oz each)
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together honey, soy sauce, olive oil, minced garlic, grated ginger, and lemon juice to create the marinade.
  3. Place the cod fillets in a baking dish and season with salt and pepper.
  4. Pour the honey marinade over the cod, ensuring each fillet is well coated.
  5. Let the fish marinate for at least 15 minutes for best flavor.
  6. Bake uncovered in the preheated oven for 12–15 minutes, or until the cod is opaque and flakes easily with a fork.
  7. Garnish with chopped fresh parsley before serving.

Notes

For extra flavor, serve with steamed jasmine rice and a side of sautéed green beans or a fresh salad.
