Baked Feta Pasta with Spinach

A creamy and flavorful baked feta pasta combined with fresh spinach, perfect for a comforting and easy weeknight dinner.

  • 200g feta cheese block
  • 300g cherry tomatoes
  • 3 cloves garlic, minced
  • 250g pasta (penne or fusilli)
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, place the feta block in the center and surround it with cherry tomatoes and minced garlic.
  3. Drizzle olive oil over the feta and tomatoes, then season with salt and pepper.
  4. Bake in the oven for 25 minutes, until the tomatoes burst and the feta is soft.
  5. Meanwhile, cook pasta according to package instructions until al dente. Drain and set aside.
  6. Remove the baking dish from the oven and gently mix the softened feta, tomatoes, and garlic until combined into a creamy sauce.
  7. Add fresh spinach to the baking dish and stir until wilted from the heat.
  8. Toss the cooked pasta with the feta and spinach mixture until evenly coated.
  9. Garnish with fresh basil leaves if desired and serve warm.

Notes

For an extra kick, sprinkle red chili flakes before baking or add grilled chicken for added protein.
