avocado deviled eggs

Avocado deviled eggs are a creamy, nutritious twist on the classic appetizer, combining ripe avocado with tangy mustard and spices for a delicious, healthy snack.

  • 6 large eggs
  • 1 ripe avocado
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste
  • Paprika for garnish

Instructions

  1. Place eggs in a saucepan and cover with water. Bring to a boil, then reduce heat and simmer for 10 minutes.
  2. Drain and transfer eggs to an ice bath to cool completely. Peel eggs once cool.
  3. Slice eggs in half lengthwise and carefully remove yolks.
  4. In a bowl, mash the avocado and egg yolks together until smooth.
  5. Add mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Mix until well combined.
  6. Spoon or pipe the avocado mixture back into the egg white halves.
  7. Sprinkle with paprika for garnish and serve chilled.

Notes

For extra flavor, add a pinch of cayenne pepper or chopped fresh herbs like cilantro or chives to the filling.
